Description

Jerusalem Artichoke, also known as sun-choke, is an herbaceous perennial. The tubers are edible but may cause flatulence in some people. Plants grow tall; small yellow flowers appear towards the end of the growing season. Allow plants to die off completely before lifting tubers. Leave some in the ground for a harvest the following year.
