Eggplant ‘Casper’ is an early maturing plant to 40cm which may need staking. Fruit, 16cm long, 8cm wide, has ivory skin, white flesh. Usually cooked. Mild flavour, reminiscent of mushrooms. Eggplants are perennial plants, usually grown as annuals in western Sydney.
