Parsnip ‘Hollow Crown’, a popular variety of the root vegetable, is an heirloom from the 1820s. The roots are long, up to 40cm in perfect conditions. The flavour is slightly spicy, nutty and earthy; it is sweeter after the first frost. This variety can be eaten raw or cooked.
