Description
Caraway is a biennial herb growing up to 60cm tall. The plants have feathery green leaves which can be eaten in salads or cooked as spinach. The white flowers are followed by small fruit often referred to as ‘seed’. The sweet anise-flavoured seeds are used in Middle Eastern cooking, and added to cakes, biscuits, bread or pickles. The roots can be eaten and taste like parsnip. Caraway can be used as a breath freshener.
Being biennial, caraway will flower in the second year and produce the small fruit containing the seeds after that. Leave flowerheads on the plant and collect seeds when they are dry and brown.
